Artichoke dip is easy to whip up, so it's no wonder it's a party favorite. But with 24 grams of fat—4.8 of which are the saturated kind—-it's far from healthy. When a reader submitted this recipe to be diabetized, I knew I could easily boost flavor while cutting fat and calories.
I started by swapping regular mayonnaise for the fat-free kind. To further diminish the dip's fat content I used 2 Tbsp. of mayonnaise instead of a cup and 2 Tbsp. of Parmesan cheese as opposed to a half cup.
By substituting one can of artichoke hearts with a can of beans, I've added tons of fiber. Plus, when pureed, the beans will make the end result nice and thick. To give the dip a rich, smoky flavor, I added a teensy bit of prosciutto. Minced parsley adds a pop of color and another flavor boost. The result? A delicious, creamy dip your guests will love-without the fat.
