Arugula Salad With Oranges

Dressing

3 Tbsp. lemon juice

2 tsp. sugar

1/2 tsp. Dijon mustard

2 1/2 Tbsp. olive oil

Salt and pepper to taste

Salad

3 cups trimmed arugula

1 cup torn red or green leaf lettuce

1/2 red onion, thinly sliced

2 small oranges, peeled and sliced into 1/2-inch rounds

Garnish

1 Tbsp. freshly grated Parmesan cheese

1. In a small bowl or measuring cup, combine the lemon juice, sugar, and mustard. In a thin stream, add the oil, and whisk constantly until incorporated. Season with salt and pepper to taste and set aside.

2. Combine the arugula and red or green leaf lettuce. Put lettuce on a platter. Top with red onion slices and oranges. Sprinkle with Parmesan cheese.
