Asian Chilled Cucumber Salad

4 cups peeled, sliced cucumbers
1 small red onion, finely diced
1/4 cup minced cilantro]
Dressing
1/2 cup rice vinegar
1 Tbsp. light soy sauce
1 Tbsp. dry sherry (optional)
2 tsp. sesame oil
2 garlic cloves, minced
1/4 tsp. crushed red pepper
Fresh ground black pepper to taste

1. In a salad bowl, combine the cucumbers, red onion, and cilantro.
2. Whisk together the dressing ingredients and pour over the salad. Cover and refrigerate for 1/2 hour before serving.
