Baby Carrots With Fresh Mint

1 lb. baby carrots
2 tsp. honey
1½ Tbsp. fresh chopped mint
Salt and pepper to taste

1. Bring 4 cups of lightly salted water in a medium saucepot to a boil. Add in the carrots, cover, and cook for about 4 minutes. Turn off the heat and let stand in the hot water for 2 minutes. Drain.
2. Add the carrots to a serving bowl. Drizzle with honey. Toss well. Cover and refrigerate for 1 hour.
3. Remove from the refrigerator, add the mint, salt, and pepper, and toss again.
