Brussels Sprouts Skewers

Wooden skewers
1 lb. Brussels sprouts
2 Tbsp. olive oil (try a flavored olive oil such as garlic or basil)
Salt and pepper to taste

Preparation Time: 40 minutes (includes soaking the skewers)
Cooking Time: 10 minutes (blanching and grilling)
1. Soak the wooden skewers in a pan of warm water for 30 minutes.
2. Meanwhile, prepare an outdoor grill. Coat the rack with cooking spray and set the rack 6 inches from the heat. Trim the Brussels sprouts by slicing off the woody end about 1⁄8 to ¼ of an inch.
3. Bring a large pot of water to a boil. Add the Brussels sprouts and cook for about 5 minutes. Drain and rinse under cold water. Drain well.
4. Combine the Brussels sprouts with the oil, salt, and pepper. Drain the skewers from the water.
5. Thread about 4 Brussels sprouts on each skewer. Grill skewers, turning on all sides until lightly browned, about 5 minutes.
