Butter Crunch Parfait

ingredients

2 cups no-sugar-added light butter pecan flavored ice cream

3/4 cup crumbled sugar‑free oatmeal cookies

4 Tbsp. fat‑free whipped topping

1/2 tsp. cinnamon

Preparation time: 10 minutes

1. Chill 4 tall parfait or wine glasses.

2. Place 1/4 cup of ice cream in the bottom of each glass. Sprinkle with about 2 Tbsp. of cookie crumbs. Layer with another 1/4 cup of ice cream and sprinkle with remaining cookie crumbs.

3. Top each parfait with 1 Tbsp. of whipped topping and sprinkle with cinnamon.

4. Serve parfaits immediately or freeze until serving. Allow frozen parfaits to stand at room temperature for 10 minutes before serving.
