Creamy Herb Dip
ingredients
1/2 cup part-skim ricotta cheese
1/2 cup plain low-fat yogurt
2 Tbsp. reduced-fat mayonnaise
8 re-hydrated, minced, sun-dried tomatoes (not oil packed)
2 tsp. to 1 Tbsp. minced fresh herbs of choice
1 tsp. fresh lemon juice
Salt and pepper to taste

Place all ingredients in a blender and process until smooth, but still a little thick. Serve with a plate of raw or blanched vegetables.
