Diabetized Fudgy Brownies

ingredients

3/4 cup flour
1/2 cup unsweetened cocoa
Dash salt
1/2 tsp. baking powder
4 Tbsp. buttery spread (such as Promise Activ)
2/3 cup Splenda for baking
1 egg
2 egg whites
2 tsp. vanilla
1/2 cup nonfat plain yogurt
1/4 cup mini chocolate chips
1/4 cup toasted walnuts

preparation

  1. Preheat oven to 350 degrees. Coat an 8-inch baking pan with cooking spray.
  2. In a bowl, combine the flour, cocoa, salt, and baking powder.
  3. Cream together the buttery spread and Splenda with an electric mixer at medium speed. Add the egg, egg whites, and vanilla. Reduce the speed to low and add in the flour mixture. Add the yogurt and mix until combined. Add the chocolate chips and walnuts.
  4. Pour into the prepared pan and bake for 20 to 25 minutes, until brownies test clean. Cool in the pan for 10 minutes and then cut into 16 squares.
