Italian Turkey Sauté
ingredients
2 tsp. olive oil
1/2 cup diced onion
2 garlic cloves, minced
2 cups coarsely crushed canned plum tomatoes
2 Tbsp. dry red wine (or use 2 Tbsp. balsamic vinegar)
2 tsp minced fresh oregano
3 cups cubed cooked turkey breast meat, skinless
2 Tbsp. minced fresh basil
2 tsp. capers
Salt and pepper to taste

Preparation time: 20 minutes
Cooking time: 22 minutes
1. Heat the oil in a large skillet over medium high heat. Add the onions and garlic and sauté for about 5 minutes.
2. Add the crushed tomatoes and wine. Bring to a boil. Lower the heat and simmer for about 12 minutes.
3. Add in the remaining ingredients and simmer on medium low for about 5 to 6 minutes. Season with salt and pepper.
