Key Lime Tartlets

ingredients

30 mini-muffin liner papers
Cooking spray
1/4 cup boiling water
1 (0.3-oz.) package sugar-free lime gelatin mix
1 cup fat-free sour cream
Juice of 1/2 Key lime
Zest of 1/2 Key lime
1 (8-oz.) container fat-free whipped topping

preparation

1. Line mini-muffin pans with liner papers and spray with cooking spray.
2. In a large bowl, stir boiling water into gelatin for 1 minute. Whisk in sour cream, lime juice, and lime zest.
3. Gently fold in whipped topping. Fill each muffin cup about 3/4 full with lime gelatin mixture.
4. Place in freezer for 2 hours. Serve frozen.
