Mediterranean Tuna Melt

ingredients

2 6-oz. cans tuna packed in water, drained

1/4 cup light mayonnaise

1/4 tsp. ground black pepper

1/4 tsp. onion powder

1 Tbsp. lemon juice

3 Tbsp. sun-dried tomatoes, chopped

5 whole-wheat English muffin halves

5 1-oz. slices reduced-fat provolone cheese

preparation

1. Preheat oven to 400°F. In a medium mixing bowl, combine the tuna, mayonnaise, pepper, onion powder, lemon juice, and sun-dried tomatoes.

2. Spread 1/4 cup tuna mixture on top of each muffin half and top with 1 slice of cheese.

3. Place muffins on baking sheet and bake 10 minutes.
