Oven-roasted Salmon with Latin Spices and Salsa
ingredients
Rub
1 Tbsp. cumin
1 Tbsp. coriander
2 tsp. chili powder
1 Tbsp. brown sugar
1 tsp. Kosher salt
1 tsp. cinnamon
1/2 tsp. cayenne pepper
1 tsp. fresh ground pepper
1 1/2 lb. salmon fillets
Tropical salsa
2 small ripe mangoes (approx. 11 oz. each) or 1 large papaya, peeled and diced
1 cup diced fresh pineapple
1/2 small red onion, diced
1/4 cup minced cilantro or parsley
3 Tbsp. fresh lime juice
1 tsp. sugar
Salt to taste

Rub
1. Preheat oven to 400°F. Combine all rub ingredients and spread over both sides of the salmon. You may have leftover rub.
2. Line a broiler pan or baking sheet with foil and coat with cooking spray; place the salmon fillets on the pan. Roast the salmon for about 10 minutes. Turn the oven to broil. Broil for 2 minutes to give the salmon a golden color. Serve with a side of the salsa.
Tropical salsa
Combine all ingredients in a bowl, cover, and refrigerate for 30 minutes.
