Pepperoni Frittata
ingredients
Cooking spray
2 tsp. light tub margarine
1/2 cup finely diced onion
1/2 cup finely diced red pepper
3 whole eggs
3 egg whites
1/4 cup fat-free milk
Salt and pepper to taste
3 Tbsp. diced reduced-fat turkey pepperoni
2 Tbsp. shredded reduced-fat Cheddar cheese

Cook time: 12 to 13 minutes
1. Preheat the oven to broil. Coat a large oven proof skillet with cooking spray. Add the margarine to the pan and melt over medium heat. Add the onions and red pepper, and sauté for 5 minutes.
2. In a medium bowl, beat the eggs, egg whites, milk, and salt and pepper together with a wire whisk. Pour the eggs over the onions and red pepper in the skillet. Cook the eggs for about 4 to 5 minutes, tilting the pan occasionally to let the top egg portion flow to the bottom.
3. Sprinkle the frittata with pepperoni and cheese. Cover and lower the heat to medium low. Cook for about 6 to 7 minutes until eggs are almost set.
4. Place the frittata about 4 inches from the broiler and broil for 1 to 2 minutes until the top is lightly browned and the cheese has melted.
