Romaine Salad with Kiwis and Orange and Walnut Vinaigrette

Salad
2 cups torn romaine lettuce leaves
2 kiwi fruit, peeled and sliced
2 medium oranges, peeled and sliced into 1/4-inch pieces
1/2 cup thinly sliced red onion
Vinaigrette dressing
2 Tbsp. balsamic vinegar
1/4 tsp. Dijon mustard
Salt and pepper to taste
3 Tbsp. walnut oil
1 tsp. minced shallots

Preparation Time: 25 minutes
1. Add the lettuce to a large platter. Top with the kiwis and oranges. Sprinkle the red onion slices on top.
2. In a small measuring cup, whisk together the vinegar, mustard, salt, and pepper. Slowly add the oil in a thin stream, whisking constantly. Add in the shallots. Drizzle the dressing over the salad and serve.
