Spicy Shrimp Skewers

ingredients

32 medium shrimp, peeled and deveined

16 wooden skewers

Marinade

1/4 cup fresh lemon juice

1/4 cup reduced-sodium soy sauce

3 Tbsp. rice wine (mirin)

1 Tbsp. grated fresh ginger

3 scallions, minced

1 1/2 tsp. toasted sesame oil

Preparation time: 26 minutes

Marinating time: 2 hours

Cooking time: 6 minutes

1. In a bowl, combine the marinade ingredients, and add the shrimp. Cover and let marinate in the refrigerator for 2 hours.

2. Add the wooden skewers to a pan of warm water and let soak for 1 hour.

3. Preheat the oven broiler. Line a broiler tray with foil, and coat the foil with cooking spray.

4. Drain the shrimp from the marinade. Add the marinade to a saucepan and heat to boiling over high heat.  Lower the heat and simmer. Thread four shrimp onto a pair of skewers (using two skewers together stabilizes the shrimp as they cook).  Broil for 1-2 minutes per side. Add some of the reserved marinade to the shrimp, and broil for 1 more minute. Serve hot or at room temperature.
