Spicy Thermos Chili

ingredients

2 tsp. canola oil

3 scallions, minced

2 garlic cloves, minced.

1 Tbsp. chili powder

2 tsp. ground cumin

1/2 tsp. dried oregano

1/4 tsp. cinnamon

1 lb. ground lean round (93 to 98 percent)

1 (15-oz.) can red kidney beans, drained 

1 (14-oz.) can no-salt-added stewed tomatoes

1 cup frozen corn kernels, thawed

Salt and pepper to taste

1. Heat the oil in a large saucepan over medium heat. Add the scallions and garlic and sauté for 2 minutes. Add the chili powder, cumin, oregano and cinnamon. Sauté for 1 minute.

2. Add the ground round to the pan and sauté for about 5 minutes. Add in the beans, tomatoes and corn, salt and pepper to taste and cook over medium low heat for 10 minutes. Pack into a thermos.
