Sweet Lettuces with Walnuts
ingredients
3 slices bread (preferably whole grain)
2 cloves garlic, cut in half lengthwise
1/4 cup walnuts
3 Tbsp. red wine vinegar
1/2 tsp. Dijon mustard
2 1/2 Tbsp. walnut oil
Salt and pepper to taste
3 cups Boston lettuce, washed and torn
3 cups Bibb lettuce, washed and torn
preparation
1. Preheat the oven to 375ºF. Rub the garlic on both sides of the bread. Cut each slice into cubes, and place in one layer on a baking pan. Bake for 10 to 15 minutes until lightly browned.
2. Heat the walnuts in a skillet over medium heat and shake well until lightly toasted, about 2 to 3 minutes; set aside.
3. Mix the vinegar, mustard, oil, salt, and pepper together. Toss the salad greens with the dressing. Top the salad with croutons and nuts.
