Sweet Onion, White Bean, and Artichoke Dip

ingredients

2 Tbsp. olive oil

1/2 cup chopped Vidalia or other sweet onion

1 1/2 tsp. sugar

4 garlic cloves, minced

1 can (15 oz.) white beans, drained

1 Tbsp. lemon juice

1 tsp. dried oregano

1 tsp. dried basil

Pinch cayenne

Salt and pepper to taste

1 can (14 oz.) artichoke heart

preparation

1. Heat the oil in a skillet over medium-high heat. Add the onion, sugar, and garlic and sauté for 3 minutes.

2. Put the mixture in a blender or food processor. Add the remaining ingredients and puree until smooth but thick. Serve with your favorite cut-up raw veggies.
