Tropical Fruit and Vegetable Salad With Chili and Cilantro Dressing

Dressing
1½ Tbsp. olive oil
3 tsp. lime juice
1 tsp. honey
½ fresh red chili, seeded and minced
2 tsp. minced cilantro
Salad
¼ medium red onion, halved and sliced
½ English cucumber, unpeeled and thinly sliced
2 kiwi fruits, peeled and sliced
1 large mango, sliced

1. Whisk together the dressing ingredients. Add the red onion to the dressing and marinate for 30 minutes.
2. Arrange the cucumber, kiwi, and mango in a shallow serving bowl. Arrange the marinated onions with all the dressing on top of the mango mixture.
