White Bean Salad
ingredients
3 cups canned white beans (cannellini, chickpeas, navy), drained and rinsed
3 scallions, minced
1 large tomato, cut into 1-inch cubes
1/2 cup chopped red pepper
1/2 cup chopped yellow pepper
Dressing
2 Tbsp. olive oil
2 Tbsp. balsamic vinegar
2 tsp. minced shallots
1/2 tsp. Dijon mustard
Salt and pepper to taste

Preparation time: 20 minutes
1. Combine the beans, scallions, tomato, and red and yellow peppers in a large salad bowl.
2. Whisk together the dressing ingredients and add to the salad. Toss well. Serve at room temperature.
